Dry vs Juicy Steak Marinade
It’s been a long time since I was in my early teens, I visited a dinner party at my Aunt’s. She served a steak item there. It was a dry and tough thing with exaggerated spices. Since then I had been of the opinion that steaks are always dull. But to my grateful surprise, I was sitting at my friend’s when this concept and impression of mine categorically changed. My friend’s mom is a fantastic cook. She made a special steak marinade for lunch that day.
After tasting that steak I fell in love with it. I inquired about the secret tips from my friend’s mom to make a juicy and tender yet a moreish steak marinade. Now this is my signature recipe.
Let’s dive into the aromatic fantasy of our recipe for steak marinade.
Ingredients’ Notes
- Italian Seasoning
Italian seasoning includes basil, oregano, rosemary, thyme, fennel seeds and marjoram all in dried powdered form. But there are a number of variations which you can make in order to customize the seasoning according to your taste. Branded and packaged Italian seasoning is also a very good option. Still you want to try it by yourself, then try this italian-seasoning recipe.
- Soy Sauce
Soy sauce is a commonly praised ingredient used in marination. It adds a distinctive savory flavor to the steak.
- Lemon Juice
Lemon juice helps in tenderizing the meat. Its acid breaks down the tough fibers of the meat. Resultantly, the steak felt more juicy and softer.
- Olive Oil
The addition of olive oil in marination seals the juices and they penetrate deep into the steak.
- Worcestershire Sauce
It is essential for creating the typical umami flavor, same as of monosodium glutamate. Umami is a mixture of sour, salty, sweet and bitter tastes. It goes really well in marinades and deepens the flavor in meat.
- Garlic
I prefer minced garlic as it is fresher and gives instant organic delicious taste. But garlic powder is also an ok option.
- Salt and Pepper
Meaty and savory foods have no value without salt and pepper. We are using both black pepper powder and red chili powder. If you want a more spicy taste then also add a bit of ground black pepper and red chili flakes.
- Steak
The base of the steak marinade is this beef. The choice of meat is always a free option for you. The same marinade can be used in chicken steak, turkey and beef. Select the cut which has softer fibers and the thickness should not be more than 1.5 inch. I recommend rib eye or New York.
- Butter
Butter is the best option to cook the steak marinade with. It gives a more indigenous aroma and taste. Otherwise regular cooking oils can also work.
- Parsley
The fresh green color of parsley nails the presentation of steak marinade. Moreover it gives a vivid aroma when mixed with the smoke of the steak.

- We shall do this flipping for 3 times which means grilling each side twice.
- When you see that the steak marinade is fully done and adopts the vibrant brown color then remove the steaks from the pan.

Troubleshooting
There are some dishes which have their own specific attitude. They demand an extra protocol in their preparation and cooking. But believe me they value your protocol and come out superb if made with care. Steak marinade is a true example of it. Be cautious regarding certain points and there will be no mess like:
- Don’t compromise on the marination time. It must not be less than 2 hours. Overnight is an ideal span.
- Steak marinade gets fully tender and cooked if you follow the given time and heat instructions. When you cut the steak before serving it looks pink inside. It’s not raw or uncooked. So don’t bother about it and dont try to overcook it.
- If you feel that steak needs some more cooking, you may grill it for a further 2 minutes. Not more than that.
- Avoid overcooking as this is the biggest reason in making the steak marinade tough and dull.
- Always brush the steak with butter at the end. It gives an extra shine to it and feels more juicy.
- Serve the steak marinade smoky hot. Its searing heat enhances the romance of this meal.
